Vin Santo Occhio di Pernice

Vin Santo del Chianti Classico DOC

The attention and the respect towards the local tradition of have made it indispensable for Torraccia di Presura the production of our own Vinsanto, the typical Tuscan raisin wine of ancient origins, that requires a meticulous technique and a very long preparation. Produced in very limited quantities, it combines perfectly with traditional Tuscan pastries, remaining also a fine pairing for all special occasions, as an aperitif and a dessert wine.

Classification	Vin Santo del Chianti Classico a Denominazione di Origine Controllata.
Vinification	The best grapes are selected and left to dry on straw mats and trellis until December, when they are softly pressed. The juice undergoes the maturation process in small chestnut barriques (caratelli) for 4-6 years and then refines in bottle.

Alcool	16 – 16,5%	Service temperature	From 8° to 20°C, according to the occasion.
Food Pairings	Liver pate, spicy and very aged cheese; it’s traditionally a dessert wine paired with dry pastries, pies and typical almond “cantucci”. Excellent as an aperitif, served cold at 8° C, it can also be tasted as meditation wine.
