THE WINERY, THE FAMILY

Torraccia di Presura is the winery located in a beautiful part of the Chianti Classico, where vineyards alternate with olive groves and forests of domestic and maritime pine trees, on one of the hillsides overlooking the Ema River, about halfway between the city of Florence and the town of Greve in Chianti.

Chianti Classico is the historical region that encompasses the Chianti Mountains, situated in the centre of Tuscany, between Florence and Siena. This area was first officially recognized over three hundred years ago, with Cosimo III de’ Medici’s edict in 1716, as a territory particularly suited for the production of high-quality wines.

The Chianti Classico territory is characterized by the historic Black Rooster trademark. Since 1924, the Chianti Classico winemakers have been united in a Consortium, the first of its kind in Italy among wine producers.

The toponym “Torraccia” likely derives from the presence of an old watchtower, a type of structure once common in this region, which has witnessed centuries of battles for supremacy, while “Presura” is the name of the entire locality, referring to a past of grazing and shepherding since in these areas, herbs similar to thistle were used by shepherds to curdle milk and make cheese. The name “Presura” comes from a local term for rennet or curd.

At the origins of Torraccia di Presura lies a deep love for this landscape, this land, and its fruits. This love has endured since 1986 — the year of the purchase of the first vineyard — unwavering, tenacious, and uninterrupted. For Paolo Osti, the choice was bold and challenging, full of risks and uncertainties, but it also brought him surprises and satisfactions. As a civil engineer, stubborn and perfectionist, and a talented and capable professional, already established despite his young age, he chose to move with his family from the city to this land and to dedicate his energies to the winery.

He designed the farm-winery, which was completed in 1995.

In 1990, the first bottling of wine with the label “Il Tarocco” took place, designed, like all the following labels, by his wife Laura, an architect and artist, who has always been present with her creativity for the design and the outline of the graphic appearance of our products.

GROWTH, VALUES and TERRITORY

Over the years, our estate has expanded with the purchase of new lands in which vineyards have been planted, reaching the current 60 hectares, of which about 35 of vines, 14 of olive groves, and about 10 hectares have been maintained as a forested area. The predominant grape variety is Sangiovese, which constitutes the “soul” of Chianti Classico. However, since 2000, international varieties such as Merlot and Cabernet Sauvignon have been introduced, contributing in various percentages to the composition of some of our important IGT wines. In the following years, with the aim to strengthen the bond with the Chianti territory, its history, and traditions, new vineyards have been replanted with native varieties such as Canaiolo Nero, Colorino, Trebbiano, Malvasia Lunga del Chianti, Ciliegiolo, and Foglia Tonda, an indigenous grape variety that was starting to disappear.

In planting new vineyards, utmost care has always been taken to maintain the forests’ integrity, the water regulation systems, and the hedges, in order to avoid damaging the local biodiversity, while also preserving some historic vineyards such as the one planted with “married” vines in 1920, now quite rare to find. Our attention and care for the surrounding environment positively reflects on the quality of our wines; the forest undergrowth scents of the Mediterranean maquis with its myrtle, rockrose, strawberry tree, bay, mastic, and juniper bushes enrich our wines with their characteristic enveloping aromas.

The vineyards of Torraccia di Presura also stand out thanks to their marl-clay soil which gives body and sapidity to the wines, their excellent exposure, and a very favorable microclimate for the growth and the ripening of the grapes, even in less favorable years. The high quality of the final product also comes from careful and constant soil management.

Since 2015, the practice of controlled grassing in alternate rows with nitrogen-fixing plants has been carried out in all our vineyards. This naturally enriches the soil with nitrogen and prevents the growth of potentially harmful plants for the vines without having to rely on herbicides in the inter-rows.

In 2013, our winery Torraccia di Presura launched a new project: the expansion of our agricultural activities with the development of an agritourism program, which materialized with the 2019 opening of the agritourism Villa Ulivello in Chianti. The agritourism is located in the Villa Ulivello complex, adjoining Torraccia di Presura, and was renovated between 2015 and 2019, following a carefully studied project by Paolo Osti himself, with the support of his architecture and engineering firm. An interesting historic villa from the early 19th century, restored with care and attention to preserving its original architectural, distributional, and functional aspects, and the adjacent farmhouse for which traditional materials were used, with natural plaster-free cement on the exterior and interior, fixtures, and materials that minimize thermal dispersions. Solar panels have been installed on the roofs of both buildings to produce hot water solely through renewable sources.

The agritourism, mainly managed by Federico Osti, Paolo’s son, offers hospitality, dining, tastings, and sales of the winery’s products. The choice of raw materials for the restaurant is based exclusively on first-choice ingredients produced on the estate or sourced locally to help reduce CO2 emissions and support the local economy.

SUSTAINABILITY AND FUTURE

In recent years, in order to increase our sustainability, new produced wines, as well as some of our historic wines, have been bottled using lighter bottles to reduce the energy consumption for glass production and transportation. Additionally, all products purchasable on our online wine shop are shipped solely using Nakpack packaging, made entirely of cardboard (80% recycled paper) and produced through certified processes to minimize waste.

Following the same environmentally-friendly philosophy, we plan to equip ourselves with a photovoltaic system to independently satisfy a significant portion of our electricity needs through renewable sources. In order to limit our water footprint, a rainwater recovery and storage system has been used since the construction of the winery, intended solely for agricultural use. We are working to officially certify our longstanding commitment to producing quality wine with a focus on sustainability and to include certifications on the labels of our products that align with our philosophy, directly communicating our contribution to an increasingly green world.

Aiming for sustainability, equal opportunities, and the integration of non-EU individuals, Torraccia di Presura has always sought to select local staff, including a multi-ethnic workforce, with almost equal percentages of men and women. All employees have always been hired with qualifications suited to their roles, and we have always ensured, at our own expense, that they receive adequate training.
